pH measures alkalinity or acidity of soil.
pH is a measurement of the concentration of hydrogen ions in the soil. The pH scale runs from 1 to 14. Below a pH of 7, soil is considered acidic. (Lemons, for instance, have a pH of about 2.0, making them highly acidic. Above 7, it is considered alkaline. (Bleach has a pH measurement of about 12.5, making it highly alkaline.
